One tree, two crops

Rather than clearing separate land for pepper, Araku's farmers train the vines up the trunks of the silver oak and jackfruit trees already standing in their coffee plots. It's an old form of intercropping that puts less pressure on the surrounding forest, and it means pepper here has always grown in partial shade rather than full sun — something that shows up in the flavour.

Berries are picked by hand as they ripen, then sun-dried on open ground until they darken into the familiar wrinkled black peppercorn. The pace is slow and seasonal, tied to the same December-to-February window the coffee harvest runs through.
